Sulla is one of Italy's lesser-known honey varieties and one of its most underrated. The Sulla plant is a wild legume that carpets fields across central Italy in early summer, producing a brief but prolific bloom that our local beekeepers in Capolona time their hives around carefully. The harvest window is short, which makes this honey rare even by Italian standards.
The flavor is delicate and refined pale golden in color, mildly sweet with soft floral and herbal notes and a natural balance that never feels heavy. It crystallizes finely over time into a smooth, spreadable texture that feels almost like a soft set. Lower in acidity than most honeys, it's gentle enough for people who find stronger honeys too intense.
Like all our honey, we source from beekeepers in the Capolona area specifically because of Italy's strict farming regulations the kind of chemical cross-contamination that's nearly unavoidable in US agriculture simply doesn't happen here the same way. What you're getting is as clean as honey gets.
How to use it: Exceptional paired with fresh ricotta or soft cheeses, stirred into herbal teas, drizzled over roasted vegetables, or spread on sourdough. Its lightness also makes it ideal for anyone new to exploring artisan honeys.
