Miele di Abete is one of Italy's rarest and most distinctive honeys. Sourced from the Silver Fir trees known locally as Abies alba that grow across the forests of Tuscany, this is a honeydew honey: bees collect the sweet secretions from the fir trees rather than from flowers, producing something entirely different in character from conventional honey.


The result is a dark, richly complex honey with deep woody and balsamic notes, a subtle resinous warmth, and a mild, lingering sweetness that never overwhelms. It's a honey for people who want something beyond the ordinary nuanced, elegant, and deeply rooted in the Italian forest.


Like all our honey, we source from beekeepers in the Capolona area of Arezzo specifically because of Italy's strict agricultural standards. The chemical cross-contamination that's nearly unavoidable in US farming simply doesn't exist here the same way. What you're getting is as clean and pure as honey gets.


How to use it: Exceptional paired with aged cheeses like Parmigiano Reggiano or sharp Pecorino, spread over dark bread, stirred into herbal or black tea, drizzled over vanilla ice cream, or used as a glaze for roasted meats and game. Its depth and complexity stand up to bold flavors that would overwhelm lighter honeys.
