Every spring, the Acacia trees that line the roads and hillsides around Arezzo burst into delicate white blossoms. Our local beekeepers let their hives work these trees almost exclusively during bloom the result is one of Italy's most prized single-source honeys: exceptionally clear, liquid even at room temperature, and almost impossibly light on the palate.
Acacia honey is the mildest of our three varieties clean floral sweetness, no bitterness, no heavy aftertaste. Because it resists crystallization naturally, it stays pourable straight from the jar for months. It's the honey food lovers reach for when they want sweetness without overpowering a dish.
We source exclusively from beekeepers here in the Capolona area because Italian agricultural standards keep chemical use far more controlled than in the US where neighboring commercial farms can contaminate even organic operations through wind and runoff. The difference in purity shows in the taste.
How to use it: The classic choice for sweetening tea or coffee, drizzling over fresh goat cheese or burrata, blending into vinaigrettes, or pairing with a cheese board. Light enough to use anywhere you'd normally reach for sugar.
